PRESERVATION OF NOTHERN AND SOUTHERN LOCAL SPECIES OF TOMATOES ( Lycopersicon Esculentum) USING DIFFERENT MOLAR CONCENTRATION OF BRINE SOLUTION

Abstract
This is a study that had the objective of preserving fresh tomatoes of Nigerian Northern and Southern species for 7 days (one week) using Brine Solution of different concentration.. There was a positive control for both species which was freshly bought tomatoes put inside four glass jars each containing brine of different molar concentration of 0.5M, 1.0M, 1.5M and 2.0M labeled X1-X4 and Y1-Y4 respectively. The negative control for both species which was fresh tomatoes kept inside glass jar containing ordinary water labeled X5 and Y5 for one week without any brine solution treatment. After the observation period of 7 days, the Northern species was found to be more effectively preserved with 0.5M NaCl Solution (Brine) for 7 days while the southern species was effectively preserved for just 3 days. Northern species is more resistant to deterioration or microbial growth and more economical considering the Quantity of NaCl used than the southern species.
